Jo Momma and I recently made a cross-country trip from Athens, Georgia to Las Vegas, Nevada with Millie (my 65 pound Goldendoodle) and my daughter who was 4 months old at the time. To say it was eventful would be an understatement! One of my favorite stops was Amarillo, Texas. I know, not probably what you were thinking. Besides the hilarious moment of Jo Momma getting pooped on (for the second time…see her holding up a 2) it was the food that won me over.
We stopped at a place called Coyote Bluff Cafe because it was the highest rated restaurant on Urbanspoon….and man, it deserved the number 1 rating. I had a burger that was topped with green chiles and served with sour cream and guacamole…it was so hard not to gobble up the whole thing (I was still trying to lose the baby weight) because it was one of the best burgers I’ve ever had.
I rarely make burgers, but this was something I wanted to try to re-create and I’m glad I did. Serve it up with chips, Andy’s Simple Guacamole and margaritas!
Amarillo Green Chile Burger
Prep: 5 Minutes
Total: 15-20 Minutes
Ingredients:
Ground Beef
Seasoned Salt
Onion Powder
Pepper
1 Can of Green Chiles
Cheese of Choice
Optional Ingredients:
Sliced Tomato
Sour Cream
Grilled Onions
Directions:
Season Beef with a generous dose of Seasoned Salt and Onion Powder and a few shakes of pepper. Mash Beef into Patties. Place burgers on a grill pan and cook to near desired doneness. Add Green Chiles and Cheese on top and cook until Cheese melts. Place on buns and serve with sliced tomatoes, sour cream and Andy’s Simple Guacamole.
