Andy’s Simple Guacamole Recipe

Relationships can be great in ways you might not even think about.  When you start dating someone, that person probably exposes you to experiences you’ve never had before…from big things to small things. In this post I’m talking about the big things…food.  At least that’s big for me.

I don’t think I had ever tasted guacamole until I went to college and once I tried it, I didn’t like it.  Probably because I ordered it at dives like Mexicalli (man, I love Athens, GA) but still, I didn’t care for it.  That was until I started dating Andy my junior year 6 years ago (6 years already?!) and he made me his guacamole.  Later I found out that it wasn’t actually his recipe, but his ex-girlfriend taught him how to make it.  See, something good does come out of every relationship!

I love this simple recipe…and if I could, I would thank his ex for sharing it with him.

Andy’s (ex’s) Simple Guacamole:

2 Avocados (don’t pick ones that are too hard)

1 Tomato, diced

½ Small Onion, diced

Handful of Cilantro, chopped

1 Jalapeno, seeded and diced

Lime, about a half, to taste

Salt, to taste

Directions:

Mash your avocados with a mortar and pestal or with spoons, add in all ingredients, stir, taste, readjust, taste again…done. Serve with chips…and a margarita of course!

Cook Tip:

Why try to chop cilantro when you can cut it!  So much easier.

Cook Tip:

Leave the pit in the guacamole to keep it from getting brown.
