This is Andy’s favorite dish, so I decided to dedicate a post to it.
Ingredients:
Chicken breasts, pounded
Flour
Milk
Breadcrumbs (I use Italian, I also like to do a mix of Italian and Panko)
Olive Oil
Sauce- click here for recipe
Mozzarella (fresh makes it so yummy)
Salt and Pepper to taste
Directions:
Preheat oven to 350. Pound the crap out of your chicken. Put a good dose of flour on a plate and season it with salt and pepper, mix. Next to your plate, put a small bowl full of milk. Next to your bowl, put a plate full of breadcrumbs. So, you should have a little assembly line going. Dip your pounded chicken in flour, then milk, then breadcrumbs and set aside on plate. Heat olive oil in pan and fry chicken until it’s a golden brown. Set cooked chicken on a baking sheet. Top with sauce and then fresh mozzarella. Bake until cheese has melted, about 10 minutes. I don’t know why I don’t make this more often, so easy…and delicious!
