I’m feeling inspired by Augusta again. There’s a wonderful restaurant there called Frog Hollow. It was hard not to order their braised pork shoulder and gouda mac and cheese every time I went. Since I’m thousands of miles away, I thought I’d cook up some sweet (and salty) southern charm right here in our desert. Enjoy!
Braised Pork Shoulder
Prep: 30
Total: 3 and a half hours
Serves 6
Ingredients
3 Piece of Bacon
1 Sweet Onion, chopped
Salt and Pepper
1 Head of Garlic, Minced
3 Tablespoons of Tomato Paste
3 Tablespoons of Flour
1 1/2 Cup Red Wine
1 1/2 Cup Chicken Stock
2 Bay Leaves
1 Cup of Water
Directions:
Preheat Oven to 325. Cook Bacon in a dutch oven, scoop out and leave grease. Add diced onion and cook over medium low for about 20 minutes. Remove onions. Season pork with Salt and Pepper and add to dutch oven. Sear Pork for about 5 minutes on each side. Add Garlic and cook for 1 minute. Add tomato paste and flour and cook for another minute. Add wine, stock, bacon and onions. Place dutch oven in oven and cook pork for about 3 hours.
Gouda Lasagna Mac-n-Cheese
Serves 6

Total: 40 Minutes
Ingredients
3 Tablespoons of Butter
1 Tablespoon of Flour
2 Cups of Half and Half
1 Cup of Milk
1/2 Tsp. of Salt
1/2 Tsp. of Pepper
1/2 Tsp. of Dry Mustard
1 Egg, Beaten
1/4 Cup of Sour Cream
1/2 Pound of Smoked Gouda Cheese, Shredded (Set a handful aside)
1/2 Pound of Cheddar Cheese, Shredded (Set a handful aside)
No Bake Lasagna Noodles
Directions
Preheat Oven to 350. Grate your gouda and cheddar and and set aside. In a small pot, melt butter and whisk in flour over medium low heat, let cook for about 2 minutes. Pour in half and half, milk and spices and cook over low heat. Whisk ingredients for a couple of minutes. Add beaten egg and sour cream, whisking occasionally. Add cheese and stir until thick and smooth. In a greased 9×9 pan, pour in a little of the cheese mixture. Layer 3 no boil noodles, they will over lap. Pour more mixture over noodles and layer with more noodles. Repeat several times. I did not use the entire box of noodles. Top the final layer with cheese mixture and the cheese you set aside earlier. Bake for about 20-25 minutes. Next, lick your plate!
