My mom’s friend Sandy was hosting a guest from Italy at her home recently. Sandy had all of her neighborhood friends bring over one of their favorite Italian dishes and then had the Italian friend judge whose recipe had the most authentic taste. My mom’s dish won! Except the Italian man told her that, “You almost ruined it with the garlic salt, that’s very American.” Well, sorry Mr. Italian man, I love garlic salt and could put it on almost anything (well, maybe not cereal…that’s the only thing i can think of) so it’s staying!
We’ve been eating this spinach bread for years. It’s a great appetizer and would be a great addition to your Super Bowl Spread.
Spinach Roll-up Bread:

Ingredients:
1 thing of Pizza Dough OR I normally use 1 frozen loaf of bread
16 oz. Spinach-chopped, cooked and well-drained–you may not need all of the spinach
1 Medium Onion- chopped or cut into small strips (aramelized or raw)
Parmesan or Romano Cheese, a good dose of it
Cayenne Pepper, Several Dashes
Olive Oil
Garlic Salt (I guess you can leave it out if you want to be more authentic!)
Directions:
Preheat your oven to 400. Spread out your dough on a rectangular baking sheet. Top the dough with well-drained spinach. Top that with your onions, a healthy dose of parmesan, a drizzle of olive oil and several dashes of cayenne pepper. Fold the four corners of the bread in. Then carefully roll up the bread into a cylinder. Make a few small slits in the bread, to vent. Paint the bread with a little olive oil and sprinkle with garlic salt. Bake for about 20 minutes. Yum!
We also make this with pepperoni and mozzarella, just follow the same steps.
