Sabbath Sunday: Prosciutto Wrapped Stuffed Tenderloin Recipe

Maybe it’s because I worked weekends for so long, but I kind of have a romanticized idea about what future Sundays will look like. In my ideal Sunday, I picture going to church, getting home, sending the kids to play outside while Andy and I cook a big early dinner.  It will be like a mini-holiday meal every Sunday.  Then I realized, there’s no need to wait. Sure, there’s only two-and-a-half of us to feed now, but we can still make Sunday dinner time special.

So, this is the start of my Sabbath Sunday series. On the menu: Prosciutto Wrapped Stuffed Pork Tenderloin, Cast Iron Potatoes with Sea Salt and Roasted Broccoli.

Prosciutto Wrapped and Stuffed Pork Tenderloin:

Prep: 15 minutes

Total Time: 1 hour and 15 minutes…give or take.

Pork Tenderloin, butterflyed

About 4 small pieces of bread, torn

1 Celery Stock, chopped

1 Onion, Chopped

1/2 Stick of Butter, melted

1 Teaspoon of Chicken Bullion Seasoning

Prosciutto

Toothpicks

Cracked Pepper

Directions:

Pre-heat the oven to 375. Stir together: bread, celery, onion, butter and seasoning in a small bowl.  Butterfly the tenderloin, Slicing it down middle, long ways, but don’t cut all the way through.  Stuff the tenderloin with stuffing, then wrap the proscuitto around the meat and secure it with tooth picks. Crack Pepper over tenderloin. Place in a baking pan and bake for about an hour or more (depending on your meat size) until a thermometer reads at least 145 degrees.

Cast Iron Skillet Potatoes:

Prep: 10 Minutes

Total: 35 Minutes

2 Russet Potatoes, Peeled and Thinly Sliced

2 Sweet Potatoes, Peeled and Thinly Sliced

Olive Oil, Just enough to coat Cast Iron

Sea Salt

Directions: 

Preheat oven to 375. Use either a mandolin (mine some how went MIA) or a sharp knife and cut potatoes in thin slices. Drizzle Olive Oil in Cast Iron. Place potatoes in cast iron and crack a healthy dose of sea salt on top, toss to coat. Bake potatoes 25-30 minutes, tossing once.

Oven Roasted Broccoli

1 Head of Broccoli

Olive Oil, I use the spray can kind for this

Garlic Salt

Pepper

Lemon (optional)

Directions:

Preheat the oven to 400. Spray a baking pan with olive oil, place broccoli in pan and spray with olive oil. Lightly dust broccoli with garlic salt and pepper. Bake for 15 minutes, broccoli will be slightly brown. Give it a little squeeze of lemon if you like.
